Litti is a stuffed wheat ball baked over fire or in an oven, filled with a spiced sattu (roasted gram flour) mixture. Chokha is a smoky mashed vegetable side made from roasted eggplant, tomatoes, potatoes, and spices. Together, they form a deeply satisfying and earthy meal.

🧾 Ingredients

For Litti (Stuffed Dough Balls):

  • 2 cups whole wheat flour
  • 1 tsp ajwain (carom seeds)
  • 2 tbsp ghee (for moin/moyan)
  • Warm water (for kneading)
  • Salt to taste

For Filling (Sattu Stuffing):

  • 1 cup sattu (roasted gram flour)
  • 1 small onion (finely chopped)
  • 2–3 garlic cloves (minced)
  • 1–2 green chilies (chopped)
  • 1 tbsp mustard oil
  • 1 tbsp lemon juice or raw mango powder
  • Handful of coriander leaves (chopped)
  • Salt to taste
  • Water (a few teaspoons)

For Chokha (Mashed Vegetables):

  • 1 large eggplant (baingan)
  • 2 tomatoes
  • 2 boiled potatoes
  • 1 small onion (finely chopped)
  • 2 garlic cloves (crushed)
  • 2 green chilies (chopped)
  • 1 tbsp mustard oil
  • Salt to taste
  • Fresh coriander (chopped)

👨‍🍳 Step-by-Step Instructions

🔹 Step 1: Make the Dough for Litti

  1. In a mixing bowl, combine whole wheat flour, ajwain, salt, and ghee.
  2. Add warm water gradually and knead into a semi-soft dough.
  3. Cover with a damp cloth and rest for 20–30 minutes.

🔹 Step 2: Prepare the Sattu Filling

  1. In a bowl, mix sattu with onion, garlic, chilies, coriander, mustard oil, lemon juice, and salt.
  2. Add a few teaspoons of water to moisten the mixture (not wet).
  3. Mix well and set aside.

🔹 Step 3: Stuff and Shape the Littis

  1. Divide the dough into equal balls.
  2. Flatten each ball, place a spoonful of sattu mixture inside, and seal it.
  3. Roll gently into round balls again.
