Dhokla is a soft, fluffy, and savory steamed cake from Gujarat, made with gram flour (besan) and tempered with mustard seeds and green chilies. It’s a light, healthy snack often served with green chutney and is perfect for breakfast, tea-time, or as a party appetizer.

🧾 Ingredients

For the Dhokla Batter:

  • 1 cup gram flour (besan)
  • 1 tbsp semolina (rava/sooji) – optional, for texture
  • 1 tsp grated ginger
  • 1 green chili (finely chopped)
  • 1 tbsp lemon juice or 1 tsp citric acid
  • 1 tsp sugar
  • Salt to taste
  • 3/4 cup water (adjust as needed)
  • 1 tsp Eno fruit salt (or 1/2 tsp baking soda)

For Tempering:

  • 2 tsp oil
  • 1 tsp mustard seeds
  • 1 tsp sesame seeds (optional)
  • 2 green chilies (slit)
  • A pinch of asafoetida (hing)
  • 8–10 curry leaves
  • 2–3 tbsp water
  • 1 tsp sugar (optional)

Garnish:

  • Fresh coriander leaves (chopped)
  • Grated coconut (optional)

👨‍🍳 Step-by-Step Instructions

Step 1: Prepare the Batter

  1. In a mixing bowl, combine besan, rava, ginger, green chili, lemon juice, sugar, and salt.
  2. Add water gradually to make a smooth, lump-free batter.
  3. Just before steaming, add Eno fruit salt. Mix gently — the batter will rise and become fluffy.

Step 2: Steam the Dhokla

  1. Grease a dhokla tray or any flat vessel.
  2. Immediately pour the batter into the tray and place it in a steamer or large pan with boiling water.
  3. Steam on medium heat for 15–20 minutes or until a toothpick inserted comes out clean.
  4. Let it cool slightly, then cut into square or diamond shapes.

Step 3: Tempering

  1. Heat oil in a small pan.
  2. Add mustard seeds and let them splutter.
  3. Add sesame seeds, green chilies, hing, curry leaves, and sauté for a few seconds.
  4. Add water and sugar, mix well, and pour the tempering evenly over the dhokla.

Step 4: Garnish and Serve

  • Garnish with chopped coriander and grated coconut.
  • Serve with green chutney or tamarind-date chutney.

💡 Pro Tips

  • Do not overmix after adding Eno, and steam immediately.
  • You can microwave the batter for 3–4 minutes if you don’t have a steamer.
  • Store-bought Eno (regular/plain flavor) gives the best result over baking soda.
