Masala Dosa is a beloved South Indian delicacy featuring a crisp, golden rice and lentil crepe stuffed with a flavorful potato masala. Served with coconut chutney and tangy sambar, this iconic dish is a wholesome breakfast or brunch that’s also a street-food favorite across India.

🧾 Ingredients

For Dosa Batter:

  • 1 cup parboiled rice (idli rice)
  • 1/4 cup urad dal (split black gram)
  • 2 tbsp poha (flattened rice)
  • 1/4 tsp fenugreek seeds (methi)
  • Salt to taste
  • Water (for soaking and grinding)

For Potato Masala Filling:

  • 3–4 medium potatoes (boiled & mashed)
  • 1 onion (thinly sliced)
  • 1–2 green chilies (slit)
  • 1 tsp mustard seeds
  • 1/2 tsp urad dal
  • 1/2 tsp chana dal (optional)
  • 8–10 curry leaves
  • 1/4 tsp turmeric powder
  • 1 tbsp oil
  • Salt to taste
  • 1 tbsp coriander leaves (chopped)

🔪 Instructions

Step 1: Prepare the Dosa Batter

  1. Rinse rice, urad dal, fenugreek seeds, and poha. Soak together for 6–8 hours or overnight.
  2. Grind into a smooth batter, adding water gradually.
  3. Cover and ferment in a warm place for 8–12 hours until the batter rises and turns slightly sour.
  4. Add salt and mix gently before using.

Step 2: Make the Potato Masala

  1. Heat oil in a pan. Add mustard seeds, let them splutter.
  2. Add urad dal, chana dal, curry leaves, and green chilies. Sauté for a few seconds.
  3. Add sliced onions and sauté till soft.
  4. Add turmeric and mashed potatoes. Mix well and add salt to taste.
  5. Cook for 2–3 minutes, garnish with chopped coriander, and set aside.

Step 3: Make the Dosas

  1. Heat a non-stick or cast-iron tawa. Sprinkle water to test—if it sizzles, it’s ready.
  2. Pour a ladleful of batter in the center and spread it in a circular motion to make a thin crepe.
  3. Drizzle oil or ghee around the edges. Cook on medium flame till crisp and golden.
  4. Place a spoonful of potato masala in the center, fold the dosa, and serve.
