Chole Bhature is a classic North Indian dish that combines spicy, tangy chickpeas (chole) with deep-fried, puffed bread (bhature). This indulgent meal is especially popular in Punjab and Delhi, perfect for brunch, lunch, or festive meals.
🧾 Ingredients
For Chole (Spicy Chickpeas):
- 1 cup dried chickpeas (or 2 cups canned chickpeas)
- 2 medium onions (finely chopped)
- 3 medium tomatoes (pureed)
- 1 tbsp ginger-garlic paste
- 2 green chilies (slit)
- 2 tbsp oil or ghee
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp garam masala
- 1/2 tsp amchur (dry mango powder)
- 1 black tea bag (for color, optional)
- Salt to taste
- Fresh coriander for garnish
For Bhature:
- 2 cups all-purpose flour (maida)
- 2 tbsp semolina (sooji/rava)
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 cup plain yogurt (curd)
- 1/2 tsp sugar
- 1/2 tsp salt
- Water as needed
- Oil for deep frying

Step 1: Prepare Chole
- Soak chickpeas overnight or for at least 8 hours. Drain.
- Pressure cook with salt, a tea bag, and 3 cups water for 5–6 whistles. Discard tea bag.
- Heat oil in a pan, add cumin seeds.
- Add chopped onions. Sauté until golden brown.
- Add ginger-garlic paste and green chilies. Sauté for 1–2 mins.
- Add tomato puree and cook till oil separates.
- Add turmeric, chili powder, coriander powder, and cumin powder. Mix well.
- Add cooked chickpeas and some water to get desired consistency.
- Simmer for 15–20 minutes.
- Add garam masala and amchur. Stir and garnish with coriander.
Step 2: Make Bhature Dough
- Mix flour, semolina, baking powder, baking soda, salt, and sugar in a bowl.
- Add yogurt and knead into a soft dough using water as needed.
- Cover with a damp cloth and let it rest for 2–3 hours.
Step 3: Fry Bhature
- Divide dough into equal balls. Roll out into circles (not too thin).
- Heat oil in a deep pan. Once hot, deep fry each bhatura until golden and puffed.
- Drain on paper towels.
