🍽️ Chole Bhature Recipe | Delhi-Style Spicy Chickpeas with Fluffy Bhature

Chole Bhature is a classic North Indian dish that combines spicy, tangy chickpeas (chole) with deep-fried, puffed bread (bhature). This indulgent meal is especially popular in Punjab and Delhi, perfect for brunch, lunch, or festive meals.

🧾 Ingredients

For Chole (Spicy Chickpeas):

  • 1 cup dried chickpeas (or 2 cups canned chickpeas)
  • 2 medium onions (finely chopped)
  • 3 medium tomatoes (pureed)
  • 1 tbsp ginger-garlic paste
  • 2 green chilies (slit)
  • 2 tbsp oil or ghee
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • 1/2 tsp amchur (dry mango powder)
  • 1 black tea bag (for color, optional)
  • Salt to taste
  • Fresh coriander for garnish

For Bhature:

  • 2 cups all-purpose flour (maida)
  • 2 tbsp semolina (sooji/rava)
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cup plain yogurt (curd)
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • Water as needed
  • Oil for deep frying

👩‍🍳 Instructions

Step 1: Prepare Chole

  1. Soak chickpeas overnight or for at least 8 hours. Drain.
  2. Pressure cook with salt, a tea bag, and 3 cups water for 5–6 whistles. Discard tea bag.
  3. Heat oil in a pan, add cumin seeds.
  4. Add chopped onions. Sauté until golden brown.
  5. Add ginger-garlic paste and green chilies. Sauté for 1–2 mins.
  6. Add tomato puree and cook till oil separates.
  7. Add turmeric, chili powder, coriander powder, and cumin powder. Mix well.
  8. Add cooked chickpeas and some water to get desired consistency.
  9. Simmer for 15–20 minutes.
  10. Add garam masala and amchur. Stir and garnish with coriander.

Step 2: Make Bhature Dough

  1. Mix flour, semolina, baking powder, baking soda, salt, and sugar in a bowl.
  2. Add yogurt and knead into a soft dough using water as needed.
  3. Cover with a damp cloth and let it rest for 2–3 hours.

Step 3: Fry Bhature

  1. Divide dough into equal balls. Roll out into circles (not too thin).
  2. Heat oil in a deep pan. Once hot, deep fry each bhatura until golden and puffed.
  3. Drain on paper towels.

🍛 Serving Suggestion

Serve hot Chole Bhature with:

  • Sliced onions & lemon wedges
  • Green chutney or mango pickle
  • Sweet lassi or masala chai

  • For darker chole like street style, always add a tea bag while boiling chickpeas.
  • Resting the bhature dough helps make them soft and puffier.
  • You can also add a pinch of ajwain (carom seeds) to bhature dough for extra flavor.
