- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/4 tsp methi (fenugreek) seeds
- 2 dried red chilies
- 8–10 curry leaves
- A pinch of hing (asafoetida)
Spices:
- 2–3 tbsp sambar powder (store-bought or homemade)
- 1/2 tsp red chili powder (optional)
- Salt to taste
- Fresh coriander leaves for garnish

Step 1: Cook the Dal
- Wash toor dal thoroughly. Pressure cook with 2.5 cups water and turmeric for 3–4 whistles or until soft.
- Mash the dal well and set aside.
Step 2: Cook the Vegetables
- In a separate pot, add the chopped vegetables with a pinch of salt and enough water.
- Cover and cook until soft but not mushy (approx. 10 minutes).
- Add the tamarind pulp and simmer for 5–6 minutes.
Step 3: Add Dal and Spices
- Add the mashed dal to the vegetable mixture.
- Stir in sambar powder, red chili powder (if using), and salt.
- Simmer everything for 8–10 minutes so flavors meld together.
Step 4: Tempering
- In a small pan, heat oil or ghee.
- Add mustard seeds, cumin, fenugreek, red chilies, curry leaves, and a pinch of hing.
