🧾 Ingredients

For the Bhaji (Vegetable Mix):

  • 2 medium potatoes (boiled & mashed)
  • 1 cup cauliflower (finely chopped)
  • 1/2 cup green peas (boiled)
  • 1/2 cup carrots (finely chopped)
  • 1/2 cup capsicum (finely chopped)
  • 2 onions (finely chopped)
  • 2 tomatoes (finely chopped)
  • 2–3 garlic cloves (grated or minced)
  • 1 tsp ginger paste
  • 2 tbsp butter + 1 tbsp oil
  • 1–2 green chilies (finely chopped)
  • 1 tsp cumin seeds
  • 2 tsp pav bhaji masala
  • 1 tsp Kashmiri red chili powder (for color)
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 1 tbsp lemon juice
  • Fresh coriander (for garnish)
  • Water as needed

For the Pav:

  • 6 pav buns
  • 2–3 tbsp butter
  • Pinch of pav bhaji masala (optional)
  • Chopped coriander (optional for garnish)

👨‍🍳 Step-by-Step Instructions

Step 1: Boil & Mash the Vegetables

  1. Boil potatoes, cauliflower, peas, and carrots together until soft.
  2. Mash them well and keep aside.

Step 2: Cook the Bhaji

  1. In a large pan, heat butter and oil. Add cumin seeds.
  2. Add onions, sauté until golden brown.
  3. Add garlic, ginger, green chilies, and cook for 1–2 minutes.
  4. Add tomatoes, turmeric, chili powder, pav bhaji masala, and salt.
  5. Cook until tomatoes are soft and masala releases oil.
  6. Add the mashed vegetables and capsicum. Mix well.
  7. Add water to adjust consistency and mash further with a potato masher.
  8. Simmer on low for 10–15 minutes, stirring occasionally.
  9. Add lemon juice and fresh coriander.

  1. Slice pav buns horizontally.
  2. Heat butter on a tawa, sprinkle pav bhaji masala, and toast buns until golden.
